Best Burgers

1. Finely chop the red onion and fry till soft, once soft add the minced garlic and cook for another 2 minutes. When cool add the onion and garlic mix to the beef mince in a bowl.
2. Add the chopped parsley, Dijon mustard, salt and pepper and mix well.
3. Fry a little bit of the burger mix to taste the seasoning and adjust to your taste. Mould the mixture into 4 burger shapes.
4. If adding the optional ingredients just mix in the finely chopped chorizo and parmesan.
5. Put a splash of oil in a frying pan and fry on both sides until brown. Once they have coloured, place in the oven at 180 degrees/gas mark 5, for 10 minutes until cooked.
6. Place a slice of Longmans Smokeacre cheese on the burgers for the final 2 minutes of cooking.
