Provolone Dolce

Product Description

Made in Lombardy, Northern Italy, it is a stretched curd sausage shaped cheese usually seen hanging in Italian Delis. The mild cheese (dolce) is aged between two and three months. It has a thin waxed rind and is supple, mild and smooth, becoming stringy when cooked. When aged between 6 and 24 months it becomes darker in colour with a tough rind and a stronger spicy flavour. The weight and shape can vary with the Giganti being up to 3 metres long.
